Beans & Rice

Ingredients:

  • 2 cups uncooked beans
  • 1 cup long grain rice (not instant)
  • chicken bullion (stock)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper
  • 1 jalapeno sliced
  • salt pork (4 to 8 ounces)
  • smoked sausage (optional)

Soak beans in water until double in size. Drain. Pour in crock pot.

Mix 4 - 6 cups chicken bullion to add to crock pot. Add black pepper, red pepper, and salt pork. Cook on high for 2 hours. Check, if beans are not tender, continue, periodically checking. Add stock, if needed.

Add uncooked rice, 2 cups stock, and sliced jalapeno to beans. Cook for 1 hour on high. Check for consistency, continue cooking until rice is cooked.

Options: add smoked sausage (plain, or jalapeno & cheese flavored.

Continue cooking on low. Add stock if needed to keep thick loose consistency. Enjoy.
