Home-made Chimichanga

Seasoning for meat
1  Tbl chili powder; 1/4 tsp garlic powder;  1/4 tsp onion powder
1/4 tsp crushed red pepper; 1/4 tsp oregano; 1/2 tsp paprika
1 1/2 tsp cumin; 1 tsp salt; 1 tsp black pepper

Ingredients

Large Flour Tortillas; 30oz can refried beans;  1lb Ground Meat
Picante Sauce;  1/2 Onion diced; Grated Cheese

Sift together seasonings for meat. Cook 1 lb ground meat with the seasonings in pan. When well done, remove from pan and set aside in a bowl.
Heat up vegetable oil in pan. Proceed to build chimichanga. Spread refried beans centered on tortilla. Spread cooked meat on top. Top that with diced onions, salsa, and grated cheese. Fold tortilla around these ingredients, closing ends as you roll it together. Fry 1 minute on each side until well browned. Continue building chimichangas in this way until meat is gone. Should be about 8 chimichangas. Fry each one, then set on pan to place in oven for one hour on warm. This will complete the cheese melting and cook the chopped onions inside. Serve with queso and salsa
